Most cheeses should be refrigerated at temperatures of 34°F – 38°F, kept in the original packaging or wrapped in wax paper, then loosely in plastic wrap.
It depends on the type of cheese. While soft cheese rinds are generally edible, the rinds on some harder cheeses may not be.
While firmer cheeses like Cheddar can last a few weeks, softer cheeses like Brie should be consumed within a few days of opening.
